Sure mayo is delicious but we all know it’s not the healthiest of condiments. With American favorites like tuna salad and egg salad sandwiches, it’s nice to know we can swap out the white, creamy goodness with a wiser choice. When we make wise choices we are winning, right?
Avocado being a HUGE staple in the Yucatan (I think I ate one every night!) and it replaces the creamy mayo. This modified recipe will wake up those taste buds and you won’t have to feel guilty about enjoying it. Here is a Mexican inspired take on the boring egg salad sandwich.
Ingredients:
2 hard boiled eggs, chopped
2 egg whites, chopped
1 large avocado, pitted and peeled
1 tablespoon plain Greek yogurt
1 tablespoon fresh lime juice
1/3 cup Dijon mustard,
Salt and freshly ground black pepper, to taste
Red El Yucateco Habanero Hot Sauce , to taste
Directions:
In a medium bowl, combine the hard-boiled eggs, avocado, Greek yogurt, lime juice and mustard. Mash with a fork. Season with salt and pepper, to taste. Add the hot sauce depending on how spicy you want it. I love spicy on everything!
Spread the egg salad between two slices of whole wheat bread, untoasted or it will slide out. Should make more than one sandwich.
Kids love it (without the hot sauce of course!) because it’s green Parents love it because it’s healthy. Sam I Am would be pretty impressed.
